Cookie recipe with Stephanie Waxberg

As part of our Bicester Village Bakes series, we’ve teamed up with fashion, beauty and travel blogger Stephanie Waxberg to bring you her trusty recipe for soft, sugary cookies - perfect for satisfying your sweet tooth.



  • 170 g of melted butter
  • 230 g of brown sugar
  • 1 whole egg
  • 1 egg yolk
  • 280 g of plain flour
  • 1 tbsp of baking powder
  • 1 tbsp cornflour
  • 180 g of chocolate chunks (I like a mix of dark chocolate and white chocolate)


  1. Preheat the oven to 160°c
  2. Mix the melted butter and brown sugar in a bowl until combined
  3. Then, add the whole egg and egg yolk and mix until you have a smooth, caramel-like consistency
  4. In a separate, large bowl mix the flour, baking powder and cornflour
  5. Pour the wet ingredients into the dry ingredients and mix to form a soft dough
  6. Add the chocolate chunks and chill in the fridge for at least 10 minutes, or until firm
  7. Remove the cookie dough from the fridge and roll into balls. I find around one tablespoon of cookie batter for each ball works well
  8. Transfer the balls onto a non-stick baking sheet, place in the oven and bake for 10 minutes
  9. Take the cookies out of the oven and leave them to cool for a couple of minutes. Serve while still warm
