Summer Rolls Recipe

In a few simple steps you too can create a healthy snack for the warm days, which not only tastes delicious but is also a real eye-catcher. Let's get started.
Ingredients - serves 4
- 12 rice paper wrappers
- A pack of vermicelli noodles
- A bunch of green asparagus
- 2 carrots
- 1 cucumber
- ¼ red cabbage
- A bunch of fresh mint
- A handful of crushed salted peanuts
- 16 prawns
- ½ lime (zest and juice)
- Olive oil
- Salt and pepper
Step by Step the perfect Summer Rolls
For the topping of the Summer Roll, the asparagus is peeled at the beginning. Then let it cook for 10 minutes. Meanwhile, prepare the rice paper sheet by dipping it briefly in cold water and then spreading it out on a surface.
Now place the Summer Roll topping on the rice paper sheet as desired. We recommend starting with the mint leaves and placing them in the middle of the rice paper. Then place the asparagus on the mint leaves. Now add delicious shrimps, thin carrot sticks, fresh cucumber slices and chopped red cabbage one after the other.
Finally add the cooked rice noodles and the chopped and salted peanuts. The topping should be placed in the middle to facilitate rolling up. Carefully roll up the rice paper sheet by folding the sides and pressing them together with your thumb.
